The flour is thoroughly washed from the peeled pork beans, soaked in water and left to swell overnight. Boil water in a pot, add a pinch of salt, add pork beans and boil until soft. When done, drain and rinse in cold water. Put the pork beans, spices, garlic, spinach and parsley in a food processor and grind until you get a homogeneous mass. Add the pea flour and mix thoroughly. Make balls from the mass, roll in turkey pea flour and fry for nine minutes.

We recommend lightly toasting and grinding the cumin seeds for an even richer flavor.
