Pork bean and beetroot hummus

You will need

  • 250 g dried shelled pork beans
  • 1 medium-sized beetroot
  • Juice of 3/4 lime
  • 1 teaspoon tahini
  • 1 pinch of paprika powder
  • 1.5 tablespoons of olive oil
  • 1 clove of garlic
  • Salt and pepper to taste
  • Water as needed

Wash the pork beans and let them soak in water overnight. Boil water in a pot, add a pinch of salt, pour in the pork beans and cook until they are soft. When the beans are ready, drain them and rinse them in cold water. Put all the ingredients except water in a food processor and blend until a homogeneous mass is obtained. If the ingredients do not blend well, add a little water. The end result should be a thick, creamy mass. We recommend enjoying the finished hummus with your favorite bread and fresh vegetables.
