You will need
- 300 g of shelled pork beans
- 1.5 cloves of garlic
- 1 tsp. cumin seeds
- 1 pinch of cayenne pepper
- 1 pinch of black pepper
- 1 pinch of paprika powder
- 16 g of Turkish pea flour (and a handful of flour for coating the falafels in flour)
- Salt to taste
- A handful of spinach
- A handful of parsley
Rinse the peeled pork beans thoroughly from the flour, soak them in water and leave them to swell overnight. Boil water in a pot, add a pinch of salt, pour in the pork beans and cook until they are soft. When the beans are ready, drain them and rinse them in cold water. Place the beans, spices, garlic, spinach and parsley in a food processor and grind until smooth. Add the chickpea flour and mix thoroughly. Make balls from the obtained mass, roll in Turkish pea flour and fry for about 9 minutes.
Tip: Cumin seeds can be lightly roasted and ground to make the cumin flavor even more pronounced and saturated.
